  • 8 ounces Penne or rotini pasta
  • 1/4cup olive oil
  • 1 Yellow onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 Large zucchini, sliced
  • 1 red bell pepper, cut into fine strips
  • 1cup Cherry or grape tomatoes
  • 1/4cup fresh basil, coarsely chopped
  • 1/4cup fresh parsley, coarsely chopped
  • 1/2cup Grated parmesan cheese
Instructions
  1. Cook pasta according to package instructions. While pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium high heat.
  2. Add onion and garlic and sauté for 5 minutes. Add meatballs, zucchini and red bell pepper to skillet and cook for 3 minutes.
  3. Next, add tomatoes and cook for an additional 3 minutes or until meatballs are hot.
  4. Drain cooked pasta and add to skillet.
  5. Pour in remaining olive oil and stir in basil and parsley.
  6. Divide mixture into 4 bowls, top with Parmesan cheese and serve immediately.
