Chicken Meatball Pasta Primavera
12 ounce package
Sundried Tomato & Roasted Garlic Chicken Meatballs
Penne or rotini pasta
Yellow onion, chopped
garlic cloves, finely chopped
Large zucchini, sliced
red bell pepper, cut into fine strips
Cherry or grape tomatoes
fresh basil, coarsely chopped
fresh parsley, coarsely chopped
Grated parmesan cheese
Cook pasta according to package instructions. While pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium high heat.
Add onion and garlic and sauté for 5 minutes. Add meatballs, zucchini and red bell pepper to skillet and cook for 3 minutes.
Next, add tomatoes and cook for an additional 3 minutes or until meatballs are hot.
Drain cooked pasta and add to skillet.
Pour in remaining olive oil and stir in basil and parsley.
Divide mixture into 4 bowls, top with Parmesan cheese and serve immediately.
