  • 4pints Chicken broth
  • 2cups Escarole lettuce, chopped
  • 1cup White onion, diced
  • 1cup Carrot, diced
  • 1cup Celery, diced
  • 1/4cup Garlic, minced
  • 1/8cup Fresh basil, chopped
  • Parmesan cheese
  • 2cups Bowtie pasta, cooked
  • Salt and pepper to taste
Instructions
  1. In a 4-quart stock pot, bring the chicken broth to a boil, then add the vegetables, garlic, pasta and meatballs.
  2. Cover and let simmer for 25 minutes.
  3. Uncover and top with the fresh basil and parmesan cheese.
  4. Serve and enjoy.
