  • 2cups Prepared quinoa
  • 1cup Frozen green peas, thawed
  • 1cup Frozen corn, thawed
  • 1/4cup Red bell pepper, diced
  • 1/4cup Red onion, diced
  • 16 ounce bag Fresh spinach
  • 1tablespoon (tbsp) Fresh oregano leaves, chopped
  • 1/4cup Extra virgin olive oil
  • Juice of 1 lemon
Instructions
  1. Heat meatballs in microwave as directed.
  2. While meatballs heat, combine quinoa, peas, corn, peppers, onions and spinach in a large mixing bowl.
  3. When meatballs are ready, add to mixing bowl with oregano and drizzle olive oil and lemon juice. Mix thoroughly.
  4. Divide among four bowls and serve immediately.
