Lemon Fettuccine with Plant Based Veggie Grain Meatballs

  • 1 lb Fettuccine noodles cooked
  • 1/2 cup Lemon juice
  • 1/3 cup Extra virgin olive oil
  • 1 cup Cherry tomatoes cut in half
  • 2 cups fresh arugula
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions
 

  • Heat Cooked Perfect Plant Based Veggie Grain Meatballs according to package directions.
  • In a small bowl whisk together lemon juice and olive oil. Season with salt and pepper to taste.
  • In a serving bowl, toss together warm fettuccine, lemon oil mixture, arugula, cherry tomatoes, and Parmesan cheese.
  • Arrange meatballs on top of pasta and serve.

Notes

This recipe can be made with any variety of Cooked Perfect meatballs.
